  • 2 large cucumbers, thinly sliced

  • 1/2 cup sour cream or plain Greek yogurt

  • 1-2 tablespoons chili garlic sauce (adjust to your preferred spice level)

  • 1 tablespoon rice vinegar

  • 1 teaspoon soy sauce

  • 1/4 teaspoon sesame oil

  • 1/4 cup finely chopped fresh cilantro or chives

  • A pinch of red pepper flakes (optional, for extra heat)

  • Salt and pepper to taste


Instructions:

  1. Prep the Cucumbers: Thinly slice the cucumbers. For a crunchier salad, you can skip this step, but for a tender texture, place the sliced cucumbers in a colander and sprinkle with a generous pinch of salt. Let them sit for 10-15 minutes to draw out excess water. Gently pat them dry with a paper towel.

  2. Make the Dressing: In a medium bowl, whisk together the sour cream (or Greek yogurt), chili garlic sauce, rice vinegar, soy sauce, and sesame oil.

  3. Combine: Add the dried cucumber slices to the bowl with the dressing. Add the chopped cilantro or chives.
