The 'Spicy Boolean' Roast Beef on a Bagel

This recipe takes the logical flavor combination of spicy jalapeño mayo, savory roast beef, and nutty Gruyère and serves it on a toasted bagel. Ingredients:

 * 1 bagel, sliced in half (plain or everything bagel works well)

 * 1 large slice of high-quality deli roast beef (thinly sliced is ideal)

 * 1 slice of Gruyère cheese

 * 1 tablespoon of jalapeño mayonnaise (see quick recipe below)

 * 1/2 tablespoon of butter, softened

For the Quick Jalapeño Mayo:

 * 1 tablespoon mayonnaise

 * 1-2 teaspoons finely diced pickled jalapeños (or more, to taste)

 * A pinch of garlic powder (optional)

Instructions:

 * Prep the Jalapeño Mayo: In a small bowl, stir together the mayonnaise, diced pickled jalapeños, and a pinch of garlic powder if you'd like. This is your custom-built component, adding a unique flavor to the sandwich.

 * Toast the Bagel: Toast the bagel halves to your preferred level of golden-brown. A well-toasted bagel provides the perfect structural integrity for the rest of the ingredients.

 * Assemble the Sandwich: Spread a thin, even layer of the jalapeño mayo on the inside of both toasted bagel halves. Place the slice of Gruyère cheese on the bottom half, and the roast beef on the top half.

 * Melt the Cheese: Put the two halves together. Lightly spread the softened butter on the outside of the top bagel half. Place a non-stick pan over medium heat, put the sandwich in the pan, and cook for 2-3 minutes, until the bottom is a perfect golden brown.

 * Flip and Finish: Using a spatula, carefully flip the sandwich. Cook for another 2-3 minutes, or until the other side is golden brown and the Gruyère cheese is melted and gooey.
